Traditional Efo Riro (Rich Vegetable Soup)

True Efo Riro is all about the “fry.” At The Treasure Pop, we ensure our pepper base is slow-fried in pure palm oil until the water has evaporated, leaving behind a thick, savory concentrate that prevents the soup from being watery. We use the finest spinach, blanched and squeezed to maintain its vibrant green color and crunch, then “stir” it into a rich mix of smoked fish and traditional seasonings. The addition of fermented locust beans (Iru) provides that unmistakable earthy aroma that defines authentic Efo Riro.

Ingredients
The Greens: Freshly chopped Spinach (Efo Shoko or Green).
The Sauce: Red Bell Peppers (Tatashe), Scotch Bonnet, Onions, and Pure Palm Oil.
The Flavor: Fermented Locust Beans (Iru), Ground Crayfish, and Smoked Stockfish.
Proteins: Usually prepared with a rich assortment of Beef, Tripe (Shaki), and Cow Skin (Pomo).
Storage & Reheating
Storage: Keep refrigerated (0–5°C) and consume within 48 hours. Because of the high vegetable content, Efo Riro is best enjoyed fresh, but it can be frozen for up to 2 weeks.
Reheating: For the best experience, reheat gently in a pot on the stove over low heat. Avoid overcooking to keep the vegetables from becoming too soft. If using a microwave, heat in 1-minute bursts, stirring in between.
